Banana Muffins

Moist, sweet quick bread made with mashed bananas

Can substitute butter with margarine

  • 12 cup (114 g) unsalted butter, melted
  • 12 cup (100 g) white granulated sugar
  • 1 (51 g) large egg, beaten
  • 1 12 cup (188 g) all-purpose flour
  • 1 cup (247 g) mashed banana
  • 12 tsp (2 g) vanilla extract
  • 12 cup (114 g) unsalted butter , melted
  • 12 cup (100 g) white granulated sugar
  • 1 (51 g) large egg , beaten
  • 1 12 cup (188 g) all-purpose flour
  • 1 cup (247 g) mashed banana
  • 12 tsp (2 g) vanilla extract

Add all ingredients together in large mixing bowl except baking soda and water.

  • 1 tsp (6 g) baking soda
  • 1 Tbsp (15 g) water, hot
  • 1 tsp (6 g) baking soda
  • 1 Tbsp (15 g) water , hot

Dissolve baking soda in hot water and add to mixture.

Bake in greased muffin pan at 350 degrees for 20-30 minutes until golden brown.
