Moist, sweet quick bread made with mashed bananas

An old family recipe

  • 2 Tbsp (28 g) unsalted butter, melted
  • 14 cup (50 g) white granulated sugar
  • 0.25 (13 g) large egg, beaten
  • 13 cup, 2 tsp (47 g) all-purpose flour
  • 14 cup (62 g) mashed banana
  • 18 tsp (1 g) vanilla extract
  • 2 Tbsp (28 g) unsalted butter , melted
  • 14 cup (50 g) white granulated sugar
  • 0.25 (13 g) large egg , beaten
  • 13 cup, 2 tsp (47 g) all-purpose flour
  • 14 cup (62 g) mashed banana
  • 18 tsp (1 g) vanilla extract

Mix all ingredients together in large mixing bowl.

  • 14 tsp (2 g) baking soda
  • 12 tsp (4 g) water, hot
  • 14 tsp (2 g) baking soda
  • 12 tsp (4 g) water , hot

Dissolve baking soda in hot water and add to mixture.

Bake in greased muffin pan or muffin cups at 350F degrees for 20-25 minutes or until golden brown.

Notes

The original has 1 cup sugar but I've also seen it written as 0.5 cups sugar.
