Moist, sweet quick bread made with mashed bananas

An old family recipe

  • 1 12 cup (340 g) unsalted butter, melted
  • 3 cups (600 g) white granulated sugar
  • 3 (153 g) large eggs, beaten
  • 4 12 cups (562 g) all-purpose flour
  • 3 cups (741 g) mashed banana
  • 1 12 tsp (7 g) vanilla extract
  • 1 12 cup (340 g) unsalted butter, melted
  • 3 cups (600 g) white granulated sugar
  • 3 (153 g) large eggs, beaten
  • 4 12 cups (562 g) all-purpose flour
  • 3 cups (741 g) mashed banana
  • 1 12 tsp (7 g) vanilla extract

Mix all ingredients together in large mixing bowl.

  • 1 Tbsp (19 g) baking soda
  • 3 Tbsp (44 g) water, hot
  • 1 Tbsp (19 g) baking soda
  • 3 Tbsp (44 g) water, hot

Dissolve baking soda in hot water and add to mixture.

Bake in greased muffin pan or muffin cups at 350F degrees for 20-25 minutes or until golden brown.

Notes

The original has 1 cup sugar but I've also seen it written as 0.5 cups sugar.
